Premium Crayfish

About our premium crayfish

Dried crayfish adds deep, savoury flavour to Nigerian soups, stews and sauces, and it is a pantry staple in many homes. Lewis Eze & Sons supplies crayfish for households, food sellers and wholesale buyers.

What to check when buying crayfish

• Aroma: good crayfish has a strong, clean, sea-like smell. A sour or musty odour means it is stale.
• Condition: pieces should be dry and brittle, without damp spots, mould or insects.
• Cleanliness: look for minimal sand, shell fragments and debris.
• Form: decide whether you want whole crayfish or ground crayfish. Whole keeps its flavour longer; ground is more convenient.

Storing crayfish

Store crayfish in an airtight container in a cool, dry place. For longer storage, many households keep it in the refrigerator or freezer. Keep it away from moisture, which spoils it quickly, and keep the container closed because the aroma is strong.

Cooking with crayfish

Crayfish is commonly ground and added to soups and stews, or added whole to pepper soup and sauces. A quick rinse removes sand or dust before use.
